#GoodGut Gluten Free Waffles

Yes, waffles can be a good gut food. Why? We are not only using gluten free ingredients, but we are using gluten free whole grains, this can be the difference between a successful gluten free lifestyle and disastrous one. Keep in mind we have nothing against gluten, other than if a person has been diagnosed with Celiac Disease. It is our theory that gluten is not the enemy in gluten sensitivity, it is actually what we have done to gluten containing crops that are the problem (blog on that coming in the future).


In the meantime, what we do know for us and our patients is that avoiding even organic gluten containing foods feels good to our guts and it is hard to argue with that. Luckily there are a number of nutritious whole grains that we can all eat in order to get the nutrients we need while avoiding gluten.


Our "Good Gut GF Waffle" is an example of how you can enjoy good food that is also good for you. No refined ingredients, no added sugar, no gluten and it is still kid approved, while helping your gut microbiome stay happy.


Makes 5-6 waffles


Dry Ingredients

  • 3 C Oat flour

  • 1 C Buckwheat flour

  • 1/2 C Coconut flour

  • 1/2 C chia meal

  • 1 Tbsp cinnamon

  • 1 Tbsp baking soda

  • 1 tsp salt

  • ½ tsp allspice


Wet Ingredients

  • 8 dates

  • 3 medium bananas

  • 3 Tbsp hemp seeds

  • 1.5 tsp vanilla extract

  • 2.75 Cups soy milk (or milk of choice)


Directions

  1. Heat the waffle iron.

  2. Mix the dry ingredients together very well until mixture is uniform. If you cannot find buckwheat flour you can easily make it by buying whole buckwheat and grinding it in a high powered blender. This can also be done for oat flour.

  3. Mix the wet ingredients, dates, bananas, and hemp seeds together in a high powered blender.

  4. Combine the wet and dry ingredients together and stir until you have a batter consistency.

  5. Scoop approximately 4 tbsp into the waffle iron and cook until golden brown.

Note: For a fluffier waffle replace oat flour with all purpose gluten free flour. This drastically reduces healthy fiber content.
